Good tip for the pumpkin soup out of the Everyday Cookbook.Chop your pumpkin a bit smaller and don't chop in the before cooking.Apparently the pumpkin 'bleeds' when chopped and releases something that gives a bitter taste, so the less chopping prior to cooking the better.

Oh dear - need to see if I can find more info - where did your tip come from I-L-B?
