i like to stock my freezer with bits and pieces a few times a year.

Lasagna
Veal and chicken schnitzel (chicken, DH thinks its pork)
Veal and chicken involtini (chicken, he is not that stupid)
Meat loaf and meat balls
Stews
Veg stock
Cream cheese Dips
Olive tapenade
Hummus
baba ganoush
½ cooked tortellini, pasta and  rice
Pesto
Parsley
Garlic and onion confit
Eggplants
Béchamel 
Soups and sauces
Panna cotta, carrot cake, slices, fruit loaf

I don’t eat lamb or pork and DH is not a fan of chicken and the only seafood he will eat is prawns (must be peeled and cleaned) and basa fish

I am going away for a few weeks i need a few ideas on what else i could freeze for DH.

What is in your freezer that makes your life a little easier?

Had to read again, still in shock!!!!

Curry pastes are great to have in the freezer

No more freezer recipe for you hally. I told you not to read it >:(. which curry paste recipe would you recommend to freeze

Promise i wont make it today, but do have an eggplant in the fridge.

I freeze any curry paste, thai red & green, indian tika paste & balinese paste, all in freezer now.

hally, I use the recipe in the link and we all love it although you need to be careful when adding the water and I quite often leave it out. The best result is achieved if you can really char the eggplant to give that smokey taste.

with the snitzel do you cook it then freeze, defrost and just reheat?  Do the breadcrumbs go soggy?

I like to have a some pizza bases in reserve for when I'm out. You could already top them if that's easier.

Thanks sue, i do have about 3 large pizzas in frezzer, ½ cooked and ready to cook,My DH was a pizza chef for 10 years i think he could handle that. We live above an Italian restaurant that my son owns he could easily eat downstairs very night if he wanted to or eat at DD place which is only a few streets away she is a cooking teacher so the food is good at both places, but no he likes to eat at home. >:(

Medusa, i do about 2kg at a time. I crumb, then freeze. if using for schnitzel i will quickly re crumb them ( i have breadcrumb mixture ready in freezer already seasoned) if using for parmigiana no i just fry, then add nap sauce then mozzarella ,can be done in the oven or stove with a lid on the pan,
I have made veal parmigiana in the varoma the only problem is you can not fit many slices

Gosh, your whole family is into cooking in a big way fundj - how I would love to just walk downstairs some nights for a feed from one of my kid's restaurants or have a meal sent up perhaps.
