I hope it works for you Marina, DH’s idea sounds feasible.

It actually turned out really well.  I would never have thought of using chia ... but there was no crunch, Cookie, there must have been quite a bit of moisture left in the mixture so the chia absorbed it all.

I thought I would make some biscuits this morning. I chose some Orange and Currant ones from Cookidoo.

However I misread the recipe or it wasn’t clear or something silly. I added a peeled, whole orange when it should have been the zest only. So instead of biscuits I made a sort of flattish cake thing, with crisp edges!  DH and DD tell me it tastes quite nice.

It looks good though cookie, did you serve it with custard or cream or did they eat it as is?

Here I am again! This time I followed the recipe exactly. It had 2 eggs and the whites of 2 eggs, so I thought they would be light cupcake type things.  However there was only a 1/4 cup flour and I think it should have been more. Or maybe it was me.
The dark things are sultanas. The mix wasn’t strong enough to hold them and they all fell to the bottom. A beautiful flavour of orange juice and zest but flops.

That's a shame, but at least they tasted good.

Ha ha cookie, fancy such a great cake maker having a disaster.  They’d be nice served with custard wouldn’t they?

Wonder why the recipe had so little flour, must have been a typo.

Oops again. I thought I would be smart and put the Olive and Parmesan bread into a casserole dish. The dish was far too small and the loaf didn’t cook right through. When I tried to turn it out I ended up with 2 bits. I put them back in the oven to finish cooking. For my photo in ‘what’s for dinner’ I plonked them back together.
