Uni's bread rolls in under an hour.
Made these using Lauke multi grain bread mix. They turned out flat but tasted alright. After rereading Chookies bread tips and hints, I think I know where I went wrong. The last rise was to be 10 minutes but I got distracted and it was about half an hour. The rolls were huge. As soon as I put the wash on top they began sinking. They couldn't hold their shape, the structure wasn't right. Yeast & water to flour ratio? I'm sure someone will tell me if this is the case.

Michele, I think over proving was the problem. Would need to look at recipe for ratio, but others have used this recipe with success.

Thanks Chookie. I have made these rolls before with success but just using white bread flour not multigrain. Will try again. I'm really enjoying making bread.

They look fine to me Mich. I always make the hole in mine with the end of a wooden spoon dipped in flour, and I make it quite deep.

Maybe that is the trick. I make my holes with a spurtle (Scottish porridge stirrer). I mighten be making them deep enough. Onwards and upwards.

Michele, your Jam Drops look fine to me. I used come Quince paste squares in some. My jam ones were very messy but tasted fine.

Whilst appearance helps aesthetically and it is rewarding to see a beautiful end product, it doesn't make any difference at all as soon as it gets bitten and chewed up so, as Cookie says, taste is the important thing.
