Have you all heard of South Australia's iconic Frog Cake, listed on the National Trust list in 2001

I love these little treats, in Romania (where I come from originally) you can still buy them in every patisserie. They are my favourite childhood treat and every time I go back to visit I need to stop and buy myself a few little green frogs.
They are made with any leftover sponge or bits of cake binded together with a rich chocolate syrup and rum essence then formed and left to firm up in the fridge before being glazed and decorated. They taste amazing

Carine, here's the link to the history of the Balfours Frog Cakes. Personally, I find them too sweet & sickening  :-))

Thanks for the link Judy!  Fondant icing would definitely make this extra sweet. I'm not fond of any kind of icing- one of the people who ditch the icing on traditional fruit cakes  :P
I love marzipan though.  My fav birthday cake when I was little was a sponge filled with a light creme patissiere, flavoured with grand-marnier!, and topped with marzipan:  can still taste it  ;D

That sounds like Miss Maud's Princess Cake. It's a sponge with a creamy custard filling and has green marzipan over it.

I love the look of those frog cakes, but artificial cream on top makes me feel nauseous just thinking about it! I'd put a flattish patty cake on top instead and cover with buttercream!
A great cook is one who can rustle up a fabulous family meal with some freezer burnt chops, wilted carrots, sprouting potatoes and cabbage that's gone brown on the cut edges.
