Hi Goldfish, welcome to the forum. There are lots of us on here only cooking for 2 or even less and halving the recipes is the way to go. We still get leftovers with half quantities sometimes but I wouldn't want to go much lower than that. I either freeze the leftovers or we have it 2 nights in a row which can be handy if you are busy or don't feel like cooking.
