Make into cupcakes, or use a mini loaf pan as I did ( made 8 cakes)

Jaffa Cakes

Fine zest of 1 orange (I used the microplane zester)
200g caster sugar
150g butter, at room temp.
240g S.R.flour
1 tsp. baking powder
2 eggs - room temp.
130g milk
100g dark chocolate - finely chopped

Orange icing
3/4 cup pure icing sugar
2 1/2 Tbsp.fresh orange juice (use less juice if you want thicker icing)


Pre-heat oven to 160c, and grease mini loaf pan, or place cupcake papers in 2 cupcake trays.
TIP - instead of cutting out paper to line the loaf rectangles, I smoothed out a cupcake paper and sprayed tin, then moulded paper into tin.  Remove the papers when cakes are cold.

Break chocolate into pieces, and grate on speed 8 for a few seconds - remove and set aside.
I used a clean jug to carry on with rest of recipe.
Zest the orange (set aside), and squeeze the juice to use for icing later.
Add butter, flour, baking powder, eggs, milk, caster sugar and zest to the jug.  
Mix for 10 seconds, speed 4 to combine.  Scrape down jug, and mix further 30 seconds, speed 5.
Scrape jug, add the finely grated chocolate, and mix 10 seconds, speed 5.

fill tray/papers to 3/4 full, and bake for 30 minutes, if using loaf pan .  
If using cupcake papers, check to see if cooked from the 18-20 minute mark.

Stand for 5 minutes in tray, then remove to wire rack to cool completely, before icing.
Drizzle icing, and sprinkle with extra grated chocolate, or orange rest if preferred.

These look lovely Maddy. We still have some Jaffa icecream left so these would make a nice sweet with it and some orange custard.
May all dairy items in your fridge be of questionable vintage.

I love little loaf cakes.  We used to be able to buy rolls shaped like that but sadly no longer but hey, what am I talking about.  I only need to buy the tins and I can make my own individual loaves.  Individual meatloaves would be nice too.  Yes, I am going to buy some of those tins.  Thanks again maddy.

I have been looking for one of these tins too. I think I will have to go to our local specialist store to get them though. I have seen them on Ebay but I do like to see the quality before I buy.

OK, a bit of Sunday late night shopping doesn't go astray - I have ordered 2 of these, not cheap but I like the look of them for my tiny bread loaves. Postage of $11 was the same for 1 tray as it was for 2 so I figured I might as well get 2.  Your link looked good Mandi.
