Easy pepperonata

This recipe is quick and easy. It can be served as a side or jazzed up to be a main.


2 tbsp oil

1 small onion

2 garlic cloves

4 capsicums  - any colour, sliced

4 tomatoes, halved

1 tsp sugar

3 tsp red wine vinegar


place onion and garlic in TM bowl and chop on speed 7 for 5 sec.

Add oil and saute for 2 min, temp 100, speed 1.

Add tomatoes and sugar to the bowl and place the capsicums in the Varoma dish. Place the Varoma dish into position and cook for 10 min, Varoma temp, speed 2. (Additional vegetables can be added to the varoma to steam at the same time eg beans, peas, corn , zuccini, thinly sliced carrots)

Remove varoma dish and set aside. Add vinegar to the tomato sauce and season to taste with salt and pepper. Cook for a further 1 min, Temp 100, speed 1.

Optional step: Remove tomato skins by hand or blend for 1 min on speed 9.

Add capsicum to the tomato sauce and stir for 20 sec, reverse-speed 1.

Serve hot or cold.


Tips: Add extra vegies to create a vegetarian main meal and serve with mashed potato, polenta or rice. Try adding some olives to the tomato sauce for extra flavour.

Riv_mum, tante grazie per la ricetta - bellissima.  ( all that Italian is finally sinking in)

It would be worth skinning the tomatoes before adding them - not that hard to do before cooking, but I always struggle to get them out after, and not blending would give a rustic texture.
