HP Sauce recipe conversion.
« on: October 30, 2011, 10:14:12 am »
I have the following recipe, which I got off Food.com by CountryLady.  I would like to make it but as a newbie, don't really know how to convert it.  Can anyone help please?

Recipe is as follows:

HP SAUCE.

Ingredients:

10 tomatoes, chopped
1 cup brown sugar,
1 onion, chopped
1 lemon, sliced
1/4 cup white vinegar,
1 tablespoon salt,
1 tablespoon allspice,
1teaspoon pepper,
1 tablespoon Worcestershire sauce,
1/4 teaspoon hot sauce (I use Tabasco)

Directions:

1.  Combine all ingredients in a dutch oven.
2. Bring to a boil, lower heat and cook, uncovered, for an hour, stirring occasionally.
3. Strain through a food mill and bottle in hot, sterilized jars.

This recipe is supposed to be really nice, as the HP Sauce recipe has been changed by the manufacturers to comply with "less salt laws".  I would appreciate your help. :)

Cheers, Nola.

Nola, I would just use the method from this Tomato Sauce recipe here on the forum.

If it is not thick enough at the end of the cooking process, just give it more time on Varoma temp with the steaming basket over the hole.

Thank you so much.  I don't have any problem with the converting of cups etc to weights and will do that, but I am really stuck when it comes to what can be whizzed together, what temperature and speed, and what length of time.  Hope that comes with time.  Cheers, Nola. :)

That looks really good Fundj,  I think I'll have to give this a go.

Is the recipe from the UK?  I just need to convert tablespoon measurements if so.

nola posted the Ingredients and i followed the Tomato Sauce method here on the forum

Method
Place all ingredients into TM bowl and process on speed 8 for 30 seconds.  Cook for 10 minutes on Varoma on speed 2.  Scrape sides and cook for a further 40 minutes on 100c on speed 2.  Process for one minute on speed 8
I Increased  the speed to 3 when it had 25min left on the timer, and i did cook it for 5 extra min on 100 speed 4.

i did take notes on somethings

10 tomatoes, chopped  740g
1 cup brown sugar,       150g
1 onion, chopped         95g
1 lemon, sliced             75g
1/4 cup white vinegar,  60g
1 tablespoon salt,         20g
1 tablespoon allspice,
1teaspoon pepper,
1 tablespoon Worcestershire sauce,
1/4 teaspoon hot sauce (I use Tabasco)

i have changed the sugar from 200g to 150 grams

Hi everyone, thank you so much for your response.  Thank you Fundj for your wonderful conversion, and I am glad it tastes so good.  Julie, the recipe states US Metric.  I don't suppose that's necessary now that Fundj has done all the hard work.  Cheers, Nola.

Thankyou nola and Fundj. I think I'll convert the tablespoons to equal 3 tsp and see how that goes. I can always increase the amounts next time if I think it needs it.  I've been and bought the tomatoes this morning, can't wait.  :)
