Asparagus & Leek Quiche

Asparagus & Leek Quiche
From my book called "Eggs" by Jodie Liano
Ingredients
1 pre baked pastry from EDC
250g asparagus, tough ends removed, cut diagonally 1/2" pieces
2tsp evoo
1 leek thinly sliced
4 eggs
180 mls milk
180 mls cream
60g grated parmessan
Pinch cayene pepper
Salt & pepper
Preheat oven 180
o
C
Grate parmesan in TM, set aside
Chop leek in TM, add oil and sate 2 mins in TM or until soft, set aside
Drop asparagus into boiling water on stove top for 3 mins, then plunge into iced water
Whisk eggs, milk, cream, parmesan cheese, cayenne and pinch of sat & pepper in TM
Add asparagus and leek, reverse speed, stir through
Pour mixture into pastry crust, cook for 40-45 mins
Cool for 20 mins then serve.
I used low fat milk and cream, it was absolutely delicious.

CP - it was a winner dinner, thanks for the lovely recipe.
AliRo - I decided not to bother cooking the leek & asparagus before putting in and it turned out nice. I also put feta in mine and it was super yum! Cooked for 45 minutes.

No, made it twice now, its from one of the books i bought in Hawaii.
Will do next time, i feel bad posting to you the whole time.
Jeninwa says i can do photobucket, will look into that, prob take me 6 months to work that out too!! Cant wait until ds can do all of this for me.

does anyone have any idea whether I really need to cook the leek and asparagus before putting in the oven? I'm thinking that because it's in the oven for 45min that it should be able to cook in there. Just trying to be lazy and miss a couple of steps

well, I'll answer my own question. I decided not to bother cooking them before putting in and it turned out nice. I also put feta in mine and it was super yum!

nope. It was in the oven for about 45 minutes, so it would have cooked in there. However I often put raw onion etc in my cooking if I know it's going in the oven.
