Name of Recipe:
Mashed Potato Bites
Number of People:
Makes 12 bites - recipe can be doubled
Ingredients:
500g potatoes, peeled and cut into 4cm cubes
600mls boiling water
1 large egg yolk
25g butter
1T chopped chives
S & P to taste
Olive oil spray
Preparation:
Place the potato cubes into the steaming basket, add the boiling water and cook
20 mins/varoma temperature/speed 3.
Remove the basket, drain the liquid, place the butterfly in place and tip the potatoes back into the bowl.
Add the egg yolk, butter, chives & seasonings to taste.
Mix for
10 sec/speed 4
.
Place heaped tablespoons onto a lined oven tray, run a fork around the bite to make some grooves, spray with olive oil and bake in a 200
o
C oven for 30 minutes.

Tips/Hints:
Can be made in advance, refrigerate until ready to place in oven.
Kulsha:These are lovely! I've made them twice with sweet potato. The first time was in the oven as per your recipe and the second time (tonight) we used the recipe as just mashed potatoes rather than baking (impatient). Very creamy, I think the egg yolk must cook when wizzing it through the hot mix (so I don't think we are eating raw egg yolk...)
JD:Yes the egg yolk would definitely cook during the mixing Kulsha, glad you enjoyed them.
Auds: I made these last night. They were delicious. Even before I put them in the oven the mash was yummy. Youngest son didnt like them but he has no taste.
DG: Kulsha, good idea with the sweet potato. DH and DS aren't fans of sweet potato but I love the stuff. Might mix both regular and sweet potatoes when I made this next.

Wonder: It would be interesting to try this using the piping nozzle.
Judy, you don't think the mixture would be too thick to get through the nozzle easily?
JD: They will look so much nicer with fancy nozzels Wonder.
Not if you use a nozzle with a good opening, even the plain round one would work Wonder. I'll give it a try with some different tips when I receive them all so that you can see which one works best.
I received the 1M Wilton tip from Wonder this morning (thanks Wonder ) so decided to have a go at these potato bites using 3 different tips I have.
In other words, it is a lot of fuss and mess to go to when I think they all look muchy muchy. You need a very good piping bag, the mashed potato goes through the tips quite easily but I split a couple of plastic bags in the process and had to seek out my nylon one. Tips don't always fit in them though as the end which is cut off is too big so I had potato going everywhere. It is best to leave the potato to cool a bit but I haven't ever had the patience to let it cool completely so maybe that would work better.
For me though, the simplest way is spooning a dob onto a tray and running a fork around it before spraying with olive oil.

The girls will love them I'm sure, but it was DH who has been telling me I just HAVE to keep trying to get it right, (he has loved all the failed trial runs) so it is really for him that I will be trying them out.
Maddy:I altered slightly
I doubled recipe, added 1/2 tsp garlic powder & 1/2 tsp onion powder. left out the chives
Used my Tbsp. sized cookie scoop, and the doubled recipe made 50 gems.
I kept the 2 egg whites, and in a cup whisked 2 Tbsp. rice flour into whites.
brushed over the gems
And baked for 35 minutes.
The egg white coating made the outside really crunchy, and the mash inside was so creamyThanks for another goodie Judy
Mab19: Made these to go with dinner last night. The GD's gave them the thumbs up.
Kimmy:Made these tonight and they are lovely. Used garlic butter, no chives and piped onto tray. Piped some into initials for the boys. Everyone loved them. Great way of doing mashed potato thank you.
Cookie:We had these for the first time last night. I just used lightly beaten egg white to brush over the potato and I was pleased at the way they turned out. Thanks Maddy and Judy.

They are nice Breezy. I had some left over from my last lot so I just sprayed a non-stick pan and reheated them to crispy potato bites once more.
