I made this recipe for the first time tonight and was really impressed.  I used chicken breast and cooked for about 13 minutes.  I like my curry type dishes quite spicy so I added two whole long red chillies and did not deseed them and I loved the extra heat.  I also added some sliced green beans and a handful of unsalted cashew nuts about half way through to get some more texture. I also added a small slurry of cornflour mixed with water to thicken it up.  This was really delicious and I would definately make it again, hubby loved it too.

This is so yummy, not to spicey but has just the right bite to it, fussy ds even like it and had the left overs for lunch, I  used chicken tenderloins cut in thirds and cooked extra 5 minutes more, another dish that will be made again  :D

I made this over the holidays, using chicken thighs and adding cornflour mix at the end.  Absolutely delicious and easy enough to be a week day meal.  I have the booklet but hadn't got around to trying it yet, but all these positive reviews have encouraged me to do so.  Thanks!!

We made this tonight and it is pretty good as a weekday meal as it is quite quick to make. Next time, we will leave the seeds in as we found it lacked the heat we are used to.

Hubby usually makes thai green chicken curry which is more involved and time consuming, making the paste from scratch and really giving an authentic taste. Although it is not as good as that, it is a lot faster and quite tasty. Might experiment at some stage with adding extra ingredients to give it a more authentic taste in the TMX.
