Chocolate Mud Cake

Good Morning All. I'm desperately looking for a tried, tested and fail safe chocolate mud cake recipe for the weekend. Have our niece's 15th Birthday and they are coming over for a small get together and i'd love to surprise her with her favorite cake. Contemplated just going and buying a packet mix, but promised myself that i would never buy a packet mix of anything ever again after i got my TMX. Have only seen 1 recipe on here for it, and it doesn't look like it has been made much. I don't feel confident enough in trying to convert one of my own recipes just yet.  Please help :)

Lisa, here are several links to mud cakes.  I did list them all separately but was on the last one and I lost them all so this was easier  :D :D

Learnt 2 things this weekend.... Be patient when cooking mud cakes and don't cook mud cake when your in a hurry!! Made the caramel mud cake from the foodfourthought blog and well what a disaster! Cooked for the recommended time of 1 hour, let cool for 10 mins took the spring form bit of tin off, looking good! Left the bottom on for 10 more minutes and then went to take it off and the cake wasn't cooked in the middle and was a runny mess! So carefully put the bottom back on and put back in the oven but without the spring bit of the pan on. BIG MISTAKE!! Started to ooze out the side. Gave it 15 minutes, and took it out and put the springy bit back on the pan to try and hold it together while it cooled. was very patient and let it cool completely before I took removed the pan. Looked quite good. Was feeling pretty pleased. Iced it and popped it out of sight ready for big birthday sing a long. Did the big happy birthday, the teenager cut the cake (her fav) and I pulled out a slice and OMG it wasn't cooked all the way through. However the big line of uncooked cake batter through the middle was tasty and like a caramel cream so not a 100% disaster. Definitely will attempt it again but will cook for at least 1 hour 30 I think :) nice tasty cake.  Definitely would have elevated blood sugar levels today though. Not the healthiest of cakes!!

Lisa, I have made that - someone sent me a copy of it.  Mine also didn't cook right through but I didn't notice it until the middle started to sink.  It was still sitting in the springform tin so I went to heat the oven up again to finishing it off and blow me down if the oven blew and I was without it for 3 weeks.  Had nothing to do with what I was cooking, the electrician hadn't installed it correctly over 2 years before and it finally decided to blow all the electronics - another story but all fixed now after great expense and some reimbursement from electrician.  Back to the mudcake - I lit the weber and tried to finish it off in there but it just started to burn around the edges so I ended up cutting off the sides in chunks and tossing the middle section.  I still have one side in the freezer and just make custard to pour over it for a quick dessert - it is delicious but like you, I think it needs a lot more cooking time or maybe cook it in a bundt tin.

If you want to resort to a packet mix .... Well and Good Chocolate Mud Cake (from Naturesworks) is absolutely awesome.  You can do a low fat version too.  It is dairy free and gluten free not sure is failsafe.  Winner every time with the workmates who have no food intolerances!!

Lisa at least you tried and that is the main thing.  Hey how do you think chocolate fondants were invented  :P
