Mango upside down cake

We have an abundance of mangoes on our property in Darwin so I made this yummy cake. The cake itself is based on the EDC 'Too Easy Chocolate Cake' (without the choc).

I put some melted butter sprinkled with brown sugar in the cake tin, and topped with my freshly sliced mangoes in one layer. I then made the cake recipe minus the cocoa and topped this over the mango mixture and cooked for the recommended time in the EDC book. But would ofcourse work with your favourite cake mix.

(I mistakenly thought my spring form cake tin was water tight and unfortunately had a 'leak' of dripping mango juice in the oven... yet to clean that off and will use a tray next time or a non-spring form tin)...  :-\

This looks delicious. I bought a tray of mangoes the other day.
May all dairy items in your fridge be of questionable vintage.

What a great idea Kulsha, any fruit could be used here.  Not lucky enough to have a mango tree in my backyard  :'( :'(

Thanks fundj, I have started your frozen mango bar recipe tonight (have the bottom/creamy half in the freezer already) - can't wait to finish it off tomorrow and try it, the unfrozen mix tasted yummy.

The frozen mango bars are gorgeous, Kulsha, you'll love them.  I really like the look of your cake as well, everything with mango is delicious, though, isn't it?
