original recipe

640 grams sugar
840 grams water
1 tbs citric acid or 20gram (small scales )
2 teaspoon of ginger or to taste (next time i will use more)
1 tbs tartaric acid or 20gram (small scales )
270 grams of lemons juice
2 tbl finely grated zest
Add water and sugar to bowl 6mins varoma speed 2
Add lemon juice, ginger and the zest. 1min speed 2
Add citric acid and the tartaric acid, mix 1min speed 2
Makes about 1 ½ liters
Store in sterilised bottles in the fridge or you can freeze it in zip lock bags

Fundj, used to make something similar when the kids were little. They loved it. Called it Head Syrup, as they thought I made it up. Thanks for reminding me, will make some and see if they remember.

I think my Dad would really love this. Can you just clarify that I buy the citric and tartaric acid from the supermarket and is it fresh ginger that you use?

yes wonder its the supermarket one and the ginger was fresh but did use same that i had frozen

I have a slight variation on the recipe that I've making for years. It's very similar and perhaps even easier in the TMX.
3 lemons
250g fresh ginger
500g sugar
500ml water
1 dsp citric acid
1 dsp tartaric acid
Simply cut the skin off the lemons with a sharp knife, halve the lemons and drop them in the TMX.
Peel the ginger, cut into rough chunks and add to the bowl.
Puree the fruits for about 10 seconds, speed 5
Add the sugar, water and acids, mix on spd 4 for a few seconds and then bring to the boil - about 8 minutes, 100 degrees, speed 2.
Strain into a large jug and then bottle, cool and refrigerate. Keeps for weeks in the fridge. Makes 1litre.
Fantastic with ice cold soda water..

Sorry but do you throw the skin of the lemon away? as it seems to read that you peel the lemon and only add the peeled lemon.

That's how I read it pp. Uni has some lemon zest in her version but busterman's is just the fruit. I'm off to make 1/2 a batch right now for our next hot day tomorrow.

pumpkin pie you need 2 tbl finely grated zest, what you do with the rest is up 2 u, i grate it all and freeze it.

Thanks Uni, have just made the first step of some of your limoncello, and now have made your lemon and ginger cordial whic is in the fridge cooling as a hot day forcast for tomorrow here. I was unsure as to what busterman meant about how she prepared her lemons for her version of this drink. Yes Judy another hot day here in Adelaide tomorrow before hopefully a cool change. It hasn't cooled down much here in Goolwa tonight, which it usually does, so a refreshing lemon drink tomorrow will be welcome.

are you going to use vodka for the limoncello PP?
I have made the cordial a few time now, but still have the 1st one that i made only 1/2 cup just to try what would happen if the bottle was not sterilised, its perfect
