I love Mojito's on a lazy hot summer afternoon and I have also been wanting to experiment with different flavoured ice cubes so this is what I came up with...........it can be eaten as a very tangy sorbet or dosed with Rum.

Zest peel of 2 limes
250 – 300g Lime flesh, zest and pith removed (can use some lemon)
100g Raw Sugar (can add more if like it sweeter)
1 bunch mint, leaves only washed
Garnish with a few extra sprigs mint
White Rum to taste approx 25ml per person about 120 ml (optional)
Method ( As per EDC sorbet)
Make Ice cubes in advance, strong dilution you can always bulk out with plain ice.
Place lime peel in bowl with sugar and good handful of mint, mill for 10 – 20 secs speed 9 (stop and scrap down if necessary)
Add lime flesh and half the ice cubes turn steadily to speed 10, add remaining Ice and another handful of mint using spatula to assist. If the consistencey need to be drier add more ice.
Add Bacardi or Alcohol of choice and blend through serve imeadiately
