Wholemeal pizza dough
« on: December 07, 2011, 12:14:03 am »
So my husband can't have white bread/pizza etc....

So I'm wondering if anyone has replaced the bakers flour with wholemeal flour??
I'm using the recipe in the book I got with thermie...

Thanks in advance!

I haven't replaced all of it - certainly part of it (ie 200grams wholemeal to 300 grams bakers flour). The bakers flour has a stronger gluten content which makes better bread dough. I wonder if you could use all wholemeal if you added some gluten flour (available from health food shops) to make up for the loss of gluten?

Give it a try, and keep us posted on your results!

You may not be able to buy it at the supermarket. You will have to go to a bread baking supply shop or somewhere that sells bakers flours.
