Creamy cashew mayonnaise from Rainbow Recipes

This is a delicious healthy quick and easy mayo. Put cashews, water, lemon, salt and garlic (optional) in the bowl, blitz and you are done in 60 seconds. Mayo without the oil. Gotta love that.

My only concern was that it didn't last as long as I would like. Aileen Sforcina (the author) says:

Creamy Cashew Mayo keeps about 5 days in the fridge.  It must be kept refrigerated for it to last.  You can freeze it but it will change the texture somewhat.  Life expectancy is extended when the garlic is omitted.  It seems to keep longer without the garlic.  Simply by cooking this mayo you can make it thicker to the consistency of philadelphia creamed cheese.  Add fresh chives and you have Cashew Sour Cream with Chives (Rainbow Recipes page 92).  This is amazingly good on baked jacket potatoes or as a dip with raw vegetable pieces or with Chia and Quinoa Crisps (Rainbow Recipes page 86), Chappati Crackers (Rainbow Recipes page 83) or any bread and cracker recipe.

Thanks for the review djinni373, loving the comments from the author.  I would like to see these types of comments after all recipes in any book - we can never have enough information.

I've just worked out how to use the forum.  It didn't prove difficult at all.

Sounds lovely.  I really, really want this book but the postage on top of the book price is a bit steep for me at the moment so I'm gradually saving.

It was so wonderful when I did a thermomix app search and there was Tenina's dinner spinner :-). I hadn't planned on buying it but thought, hey, anything to support Tenina, I think what shes doing is brilliant.

So now I live in hope of seeing Rainbow Recipes and Quick Fix in the Thermomix as apps or kindle books!
As my picture shows, I've suddenly become younger :-)  DD was of the opinion that her picture should be here, not mine!

Made this again last night. Aileen, it is brilliant!  I have to actually show the recipe to my DH to convince him there is no oil, eggs etc at all in it.  It tastes so unbelievably creamy and yum and when you eat it you feel far less guilty than eating oil based mayonnaise! Interesting discussion re keeping it in the fridge. So far I have made it a couple of times and I prefer to not keep it longer than 1-2 days  in the fridge, that is, if there happens to be any leftovers! I only do this as my fridge space is running at a premium at the moment and I hate having numerous odds and ends containers floating around the fridge all the time. However, I would have thought that being non egg based this would actually last longer in the fridge than homemade mayonnaise, and maybe one would have to just restir it after 4-5 days. In any case, definitely a recipe that should be in the repertoire of any TM owner!  If I was to give it a downside,thanks to your lovely book Aileen, I am churning through my  cashew nut supply at the moment and unfortunately they are not the cheapest  to buy!

We love this mayo, sooooo yummy! DD smothered it on a potato salad she made for tea the other day and also yummo on a plain old tossed salad.

Whipped this up tonight at the last minute to go with sweet potato fritters and although it is quite a runny mayo (obviously I didn't cook it to make it thicker like Aileen suggested) it worked well for what I wanted. Wasn't too sure when I stuck my finger in the bowl for a taste but over the patties and salad, it was lovely and DH didn't have a clue it wasn't anything other than normal mayo. Must get some more cashews  ;)

CREAMY CASHEW MAYONNAISE from Rainbow Recipes pge 95

Aileen Sforcina, author of the above book, has been kind enough to grant permission to post this recipe.

This is a deliciously creamy mayonnaise.  The tang is achieved by the use of lemon juice rather than vinegar which is an irritating substance. This recipe can be used to replace traditional egg/milk/vinegar based mayonnaise preparations.

Ingredients

1 cup raw cashew nut pieces
1 cup water
Juice of 1 lemon or to taste
1 or 2 cloves garlic (optional)
1 tspn salt or to taste

Method

Place all ingredients into TM bowl and pulverise for 60 seconds on speed 9.

Serving suggestions - Serve as for mayonnaise with salads.
                              Delicious served with potato salad or coleslaw.
                              Serve on hot jacket potatoes.

This keeps for about 5 days in the fridge, longer if you omit the garlic. It is a thin mayonnaise but by simply cooking it, you can make it thicker to the consistency of philly cream cheese. Add fresh chives and you have cashew sour cream with chives. Good on jacket potatoes, as a dip with raw vegies or with crackers or any bread.

This recipe popped up in a post this week & interested me as it's dairy & sugar free. Made it tonight to go with a coleslaw & it was yum. Great to find a salad dressing that my DH can eat.

Do you have the Rainbow books Kerry?  I'm sure you'd find lots of recipes for DH in them.
