Annette Sym's Mexican Dip

Name of Recipe: Annette Sym's Mexican Dip
Number of People: Serves 12 as an appetiser but a lot more just for nibbles.
Ingredients:
450g refried beans
375g jar hot salsa (I used medium)
1 avocado
1 tblspn taco seasoning
juice of 1/2 lemon
40g reduced fat tasty cheese
1/2 cup diced tomato
1/4 cup diced capsicum
2 shallots sliced
1 x 200g tub low fat natural yoghurt (I used about 300g low fat sour cream but the yoghurt is easier to spread)


Preparation:
Place the can of refried beans and the jar of salsa into the TM bowl and mix 20 sec/reverse/speed 3.
Spread over the base of a 23cm pie dish. Rinse the bowl.
Place the avocado flesh, the taco seasoning and the lemon juice into the clean TM bowl and mix 15 sec/speed 5.
Place dobs on top of the bean mixture and gently spread out with a fork.
Rinse the bowl and add the diced cheese. Grate 2 sec/speed 8. You want some texture in the cheese hence the short chopping time.
Spread the yoghurt or sour cream over this layer then sprinkle over the diced tomato, capsicum, shallots and ending with the grated cheese.

I took it to a Mexican party tonight CC - it is very tasty.

There was another dip there which was really nice - I have found it here if you want to check it out.

I have made that dip many times JD. Since getting thermie I haven't even looked at Annette Syms books and my waistline tells the signs of that  ;D

Might have to dig them out and try to convert some recipes.
Exercise is a dirty word... Every time I hear it, I wash my mouth out with chocolate

DG, there are a few recipes on the forum converted from Annette's books.  Macaroni Beef is the first that comes to mind.

We're goping to a BYO absolutely everything this week, so the dip would be nice for that.
May all dairy items in your fridge be of questionable vintage.
