Best Potato Salad?

I just wondered if anyone can recommend a really nice potato salad recipe? Preferably one that can be made a day in advance. :)

 I know Hally loves this salad dressing of Uni's Chelsea and further down Hally lists the ingredients she used in her salad so perhaps this one would be what you are looking for.

Made one for visitors today,  which they all loved.  has baby capers, and watercress in it.  Cooked the potatoes yesterday,  made the dressing yesterday,  mixed them both together this morning.

1/4cup of both Mayo and Greek yog.
3 teaspoons horse radish sauce.
15 mls apple vin.
1 teaspoon mustard.
Mix all in TMX, then add 2 tablespoons of baby capers,(drained) and 1/4 cup of chopped parsley.
Recipe says 1 cup of watercress,  but could use more parsley.

I usually pour a bit of apple cider vinegar over the potatoes while they are cooling. Gives a really nice taste to the potatoes. I make a dressing similar to achookwoman but add dill instead of parsely. Poured over crispy fried bacon and sliced boiled eggs.

Am so excited... Just made my first mayo ever, to make this beautiful potato salad dressing.

I knew I had read one somewhere that called for Dill, so I made sure I bought some yesterday and the do you think I could find it again? I remembered a comment about how you would think its too much dill but it is actually delicious. I had this one already saved, I had made fresh yoghurt ( have been doing that for years etc)  in preparation, drained it yesterday to have some thicker 'Greek style'.... By no recipe. Finally when I read down enough I saw a mention of dill.... Just when I was about to make up my own from memory I continued with this one.

Thanks twitterpated!!!! So I didn't add horseradish as 1. I didn't have any and 2. Wasn't sure if it would make it a bit hot for  the kids. I only had large capers so I used about 8 and thinly sliced them. My fresh mayo and the rest. It's delicious. Can't wait to put it together with my potato later today for our new years BBQ by the pool at friends. Thanks so much!

Great, cause there was so much food, I brought LOTS of it home. Hubby did say he liked it though so fingers crossed, might be our dinner tonight!
