Thanks Chookie & JD - I'll put it on the shopping list. Also want to try Quirky Jo's caramel custard which uses custard powder as well, so guess I can justify it.

Deedub, I also make a Lemon spread that has no butter but uses custard powder. Not as nice as Tenina's but not as rich and the kids love it.

I wouldn't normally use custard powder but it works for this slice and gives it that shop bought vanilla slice taste that has everyone reminising when they taste it.
Made this again yesterday, added some lemon juice to the passion fruit icing , yum.

I made these yesterday, reduced sugar to 180g, definitely sweet enough with this amount. Delicious! Won't post a photo, my icing skills not up to scratch, plus I colored the icing bright pink for DD's birthday - tasted better than they looked but kids loved them. Does anyone know how long they would keep?

This recipe looks great! I have just been to the shop to grab what I need, but realised I am also out of cornflour
Do you think Tapioca flour would be ok?
Also, once you have poured the custard over and placed the second sheet on top, do you then just put it in the fridge to set? Sorry if that is a silly question, I have never made vanilla slice before

Not sure about the Tapioca Flour but I made this yesterday for the first time and forgot the vanilla (no vanilla in vanilla slice!!) and it still tasted yummy. I actually left mine out for a while and the custard still set though it is firmer again today after being in the fridge.
Hope you enjoy them.

Thanks for that Shazzy, I went ahead and made it with the tapioca, didn't really have another option as I couldn't get back to the shops, in the fridge now, will see how they go
