I have made mayo twice in the past week - both times successfully!

I do have a question though, and it may show my mayo naivety, but what is it that gives mayo it's tang? Maybe I'm just too used to store bought mayo, but I do like the tanginess. The mayo I've made is delicious and thick and creamy, but I'd love it to have that tang.

Sometimes i add more garlic, or lemon juice or lime juice.

Same.  Also if you use all olive oil it over powers the tang.  I use 100mls of olive oil and 150mls. of rice bran oil.

I haven't as yet made this, but perhaps make Tenina's No Fail Mayo.

A bit of mustard and more lemon juice should do the trick if you want it more tangy. I love home made mayo I always made my own even before the Thermie.

Excuse my ignorance but do you buy dry mustard in the spice section of supermarket and can you use regular white vinegar instead of white wine vinegar?

Or rice wine vinegar - have that in the pantry too

I always use dijon mustard (paste) and just regular white vinegar generally - hope that helps

i use only veg oil. i adjust the flavor when i need too, eg garlic,curry,chili
i don't need a recipe i'm italian

I use dijon mustard too and normal vinegar, with grapeseed oil.
May all dairy items in your fridge be of questionable vintage.

Thanks everyone for all the hints!
I was using grape seed oil as this seemed to be the most unflavoured oil suggested (in previous posts that I'd read). I used white vinegar initially after reading that it had more reliable results. I made the second batch using half vinegar half lemon juice to try to get a bit more tang, but it wasn't a lot different. The mayo was definitely beautifully thick and creamy though!
So now that I've read all your comments, I'll add some dijon mustard and try using all lemon juice. Looking forward to the results!

I love Quirky Jo's mayo.  It is very flavoursome.  :)
