Advice please :-)

I am making mini Kahlua steamed puddings for one of my desserts, and it says to use 1 cup mini pudding moulds......which I don't have, and my dariole moulds are only 3/4 cup capacity.
Would ramekins suffice?  I haven't made these before, so I'm also wondering if they rise much?  ???
Probably a stupid move using a new recipe for Christmas.....but sometimes I just don't think about those things  :P

Maddy can you just put less filling in the dariole molds? After a huge main meal, a smaller pudding would be quite OK to serve. You can fit a lot more of them into the varoma dish than the ramekins. I have used the small ramekins though before I bought the Nestle pudding molds.

Will they rise much do you think?
I guess I could dump the rest in a larger pudding bowl, and just cook that for longer, and eat after Christmas.

Thanks Judy.....*slaps forehead* can't believe I didn't think to use the varoma to steam them.

In the December good taste magazine....will let you know if they turn out nice and post for you  ;)  The raisins are drowned in Kahlua  :-*

Maddy I don't see why you couldn't use either larger moulds or more smaller ones. Just adjust the cooking time. They sound delicious.
May all dairy items in your fridge be of questionable vintage.

Well I steamed the first lot....took 30 minutes for 7, in the metal dariole moulds.
......and frozzie.....the raw batter was scrummy!......just couldn't help myself......had to stop inhaling the kahlua.....kids were looking at me strangely!  :P

Well they were delicious frozzie  :)
Don't think hubby has complemented a dish more.....which is a miracle in itself!

Recipe  here



Recipe made  15 mini puddings(which were filling enough), so it took 3 x 35 minute steamings.  Will definitely halve recipe next time.....although, hubby has polished off the left overs.
