CRAISIN & PISTACHIO RICE SALAD
200g basmati rice
900g water
1 pkt craisins (dried cranberries)....170g
1 cup (100g) pistachios.....you can alternatively use pecans or walnuts etc.
2 sticks celery (each stalk sliced in 1/2 length ways, then finely sliced)
4 Tbsp. red wine vinegar (50g)
4 Tbsp. olive oil (50g)
Salt &pepper
Weigh rice in basket, then rinse well under tap.
Weigh in 900g water into jug, place in basket with rice, and cook for 15 minutes, varoma temp., speed 4.
Once cooked, rinse rice under cool water and drain well. Set aside in a medium sized bowl.
Rinse jug in cool water, dry and place pistachios (or nuts of choice) Into jug. Turbo a couple of times shortly to chop. Don't make meal though
Empty into the bowl of rice, and add the craisins and chopped celery.
Place the red wine vinegar & olive oil into jug, season with salt and pepper and mix for 5 seconds, speed 4.
Pour over the rice mix, and combine well.
Salad is best to chill well before serving, and I'm sure it's lovelier the next day too

Members' commentsFrozzie - Just had a little taste... Oh my yummo maddy... Surprised me didn't think it would be so tasty.. Only thing I changed is added a little sugar to the dressing as I found it a bit vinegary and tastes lovely with the cucumber (subbed for celery).
blackwood - Thanks so much for a great recipe Maddy! I've made this a few times now and it's a winner with everyone! The first time I made it was to take to a Christmas get together. Everyone commented on it as well as the wonderful colours of the salad. I pretended that I'd put so much thought into what to take as I said "Yes, I thought I'd do a festive looking salad (being a green and red salad!!!) I loved it with cucumber in particular (seeded like maddy suggested). It's now one of my favourite salads. 5/5!
JD - I made 1/2 quantity of this recipe using slightly different ingredients. I only have dried cherries at the moment so I replaced the craisins with them and for the dressing, as I am not keen on red wine dressings, I used Helene's balsamic vinegar reduction instead (1 dessertspoon mixed with 2.5 dessertspoons EVOO). The salad therefore looks a lot darker than maddy's and not so pretty either but it tastes wonderful. Thanks maddy, another good one.
