FeeBee, I did a google search and found some comments on Potato & Leek soup (in the soup section, not the reviews section). I have added it to the EDC list of reviews.

There isn't a review for Creme Anglaise either, just wondering if anyone has tried this?

Hi everyone. I was wondering if anyone has made the citrus marmalade from the EDC. I made some with a kilo of the last of my limes a couple of days ago & wasn't very impressed with the results. It certainly set alright, but unusually for EDC recipes isn't sweet enough! It took ages to mandolin the limes(my old Magimix was unavailable) & I thought it wasn't worth the effort as there was too much skin in the completed marmalade. It made 4 jars & I think it will be good as added flavour in curries but too bitter to eat on toast!
I get many limes each year so will try a marmalade next year( & still have enough to make another batch this year), but wont be using this recipe.
Any thoughts?

Lizzie, I have made that citrus marmalade heaps lately, all good. I just reduce the sugar a bit.

Has anyone made the Chocolate Mousse?

yes MJ I made this today, simple to make and tasted lovely. As it is quite rich I made it into 8 small glass dishes and served with berries.

rice
EDC updates
rice page 16
The basket will actually hold up to 500g of uncooked white rice.
If you soak your rice in your Thermoserver whilst your main is cooking, it will reduce your cooking time. E.g. 400g of brown rice soaked in boiled water for 20 minutes will cut cooking time from 35 to 22 minutes.

Vegetable Stock
EDC updates
Vegetable Stock Concentrate p.17
The high quantity of salt in this recipe preserves it, but also creates the intensity. Many customers have reported that they prefer to reduce it by up to 50% and store in trays or containers in the freezer, it will not freeze solid. This may mean you need to increase the amount you use in recipes to create the same intensity.

There are a numerous recipes that provide different textures and outcomes. The longer you pasteurise, the greater the denaturation of protein structure – the thicker and creamier your result will be.

Uni I have put the link on the first page of this thread so that people can go over to the blog and have a read or print the list out which I have done. I've also put an ** alongside any on our list which are also on this blog list but it would pay to print the list out for ourselves as there are many on the list that we do not have reviews for. This is the best list of tweaks I've seen for the EDC.
