Uses for Quince left over from Quince Vodka?
« on: January 08, 2012, 05:06:25 am »
I've just strained off two large jars of the vodka that has been partying in my kitchen cupboard with lots of grated quince since last autumn/winter.  the vodka is fine . . . but must say the grated quince mush that is left smells wonderul and it seems such a shame just to discard it.

Can anyone tell me if it can be used for anything at all?  Into cakes?  Liquidize it and stir it through icecream??  Some kind of weird and wonderful jam type of thing???

Or am I just being very fanciful and face the need to just bite the bullet and toss it?

Many thanks!!

Gosh don't toss it with all that vodka in it. It would be lovely with icecream. You could probably stir a little through icecream, not too much as it may affect the freezing of the icecream. Could you use it for alcoholic quince paste?

Wow! Thanks Cookie1 -  - both suggestions are great - didn't think about the quince paste!!  Will give that a whirl and see what happens!!  Thanks again! :)  :)

What's the Vodka taste like?
A great cook is one who can rustle up a fabulous family meal with some freezer burnt chops, wilted carrots, sprouting potatoes and cabbage that's gone brown on the cut edges.

Sorry! forgot to get back to this with an answer . . . . .

MJ - just gorgeous!!  Can't quite describe the colour - it's almost like a tropical sunset . . .(she waxes poetic . . .  :-)))

Cookie - we did try the quince paste but something went a little haywire and we ended up with something that would take the end off a chisel :-)) ??? ;D  Probably our inexperience I'd say . . . . . .

Now the quinces are back in season I've tried Thermomixer's instructions for quince paste and it worked perfectly!  The whole tray has "walked" out of the fridge (for friends, guests, etc) so now making another today - might try a little less sugar this time.

If you are looking for a weird and wonderful Jam-type thing, what about Quince and Tomato Jam?  I love that.  Don't have the recipe converted for TMX yet, but will get on the case if you decide to try it.  Yum!

I would just make EDC custard and add the vodka-y quince remnants in at the egg and milk stage.  Then you'll have seven minutes of stirring and a delightful exotic and delicious custard experience to follow, I'll bet.

(My confidence for saying this comes from the fact that I threw Quince and Tomato Jam into custard last year and loved it a LOT.)

My brother brought me round a mini tonne of quinces the other day. I made some quince coulis to go with the Swedish icecream cheesecake and hope to make some paste tomorrow.
