Cooking whole crab in the varoma????
« on: January 15, 2012, 01:54:44 am »
We have a whole mud crab ( cut up into quarters ) for dinner tonight.  I've searched these forums and even dr google hasn't come up with information on how to cook a whole crab in the TMX?

Surely it can be steamed in the varoma?

I thought some of the more experienced members on here might have done it before and be able to give me a bit of guidance in this matter? How long should I steam it for and are there any special tricks I should know?

Thanks!

Lucky you snappy, I've never tried one of those mud crabs.  I can't see why you cannot steam it in the varoma as you can cook prawns that way.  According to the Full Steam Ahead cookbook, 800g raw, defrosted prawns in their shells takes 10-15 minutes
at varoma temp/speed 1 with 500g of water in the bowl. 500mls water is for 30 minutes cooking time, any longer and you need to increase the water by 250g for each additional 15 minutes. These times are for tap water, not boiling water.

I tend to put more water in the bowl whenever I steam anything (at least 650g) and use speed 3 to get a better volume of steam.  Good luck, let us know how you got on.

Snappy, there is a crab recipe apparently in "In the Mix" so perhaps someone can check out those instructions and see if it would help you here.

Ok, all cooked!

For any looking in the future I used 650g water, Varoma, speed 3 for 15 mins and it is perfect!

I also made the Almond Gazpacho from Mark Bests recipe in In the Mix to go with it.  Yum!

OMG mud crab. I love it but only but the live ones and I do think it would fit into the varoma so next time I will do it.

Steaming whole would obviously take longer than the 13 minutes in boiling water so I would go for  Judy's method. I have steamed whole fresh cray fish tails  in the varoma  for just a very few minutes until pink.

I haven't had mud crab for a few years. I'm glad it worked out.

When we are up North in our caravan, we steam mud crabs in a big pot with a cake stand in it.  The cake stand keeps the crab out of the water.  obviously, your crab would have had to be dead to cook it in the Varoma, or it would have eaten it ;D.  Did you put it in the freezer for a while to kill it, or did you pierce the brain.  I must try this with my TC when we go away this year.  Steaming is definitely better than boiling it, as it tends to fill up with water when boiled.
Cheers, Nola.

Uni, we go away every year for about 5 months while it is cold in Perth.  We jump in the caravan and head North towards Broome.  Usually end up at Barn Hill or Port Smith, right on the coast.  Port Smith is well known for it's Mud Crabs.  Got to get pretty muddy to get them though ;D.  Usually leave here around mid April, get back 1st October.  Thermie is coming with us this year :D
Cheers, Nola.

Ok, I admit that i like to eat meat but I'm really not one for killing it myself. The kind ladies at the fish shop killed and quartered it for me.  I don't think I would ever be able to pierce the brain  :-\

Steaming it definitely worked out well.  Will be cooking any crabs this way from now on.
