Spicy Coriander Chicken

Spicy Coriander Chicken.
This can be as spicy as you like. We like it mild so I have added Sweet Chilli Sauce, but for more spice add some red chilli. This will feed 6/8 people, and can be cooked on a BBQ, stove top or in the oven. Make 1/2 the recipe if you wish, but it is equally nice cold.

Into TMX bowl place 4 sprigs of fresh Coriander, 4 cloves of garlic, 1 Tablespoon of Sweet Chilli Sauce nd 4 Tablespoons of water. Zap until the Coriander is finely chopped.

Slice 1 Kilo of chicken Breasts, (or Thighs) into long flat slabs and lay in a large plastic container with lid.
Pour mixture over, scraping any that is sticking to sides of bowl. Stir to mix in until all chicken is coated. Cover with lid and keep in fridge for up to 1 day.

Cook, using which ever method chosen.

Serve with salad, or Fried Rice , or Alyce Alexandra's ,"Corn Pancetta and Chives".

Love the sound of this one Chookie as I love coriander I'm just waiting for my plant to grow a bit so that I can start using it.

This does sound nice and very easy. My coriander is looking pretty drab, might have to buy some more before I can give this a try as well.

This gets 5/5 from us. Wonderfully tasty on the BBQ but so so easy. I used 1/2 a red chillie instead of sweetened chilli sauce since I wanted a bit if bite. Yum!

every weekend for the last month we have bought a punnet of coriander plants. The only prob is no more than 2 days later there is not even a remnant left and we don't think its snails. It has been extremely hot in summer here in WA so:

a) should they be in the shade
b) is there a special potting mix
c) whats the trick

CP,  as they grow in the cool weather here,   I think in the shade is the way to go.

It's interesting you have had problems with corInder plant. For the first time something has munched into the leaves and left me with the main stems only.

It is a bit hit and miss with coriander CP.  I only ever had one that was hugely successful.  I have just bought a slow bold coriander and blow me down if it didn't go to seed within 2 weeks.  I went back and bought another one and mentioned it to the salesperson - oh they do that she said!!  How can you call it a slow bolt seedling then I queried.  As Chookie said, they go better in shade or a bit of sun but mainly shade from the hot afternoon sun and I think the snails like them so if you can protect them from that it may be useful. I'd give them some liquid fertiliser too. It is disheartening not to be able to grow coriander successfully, I love the stuff more than basil yet my basil plant never lets me down.

It's me CP. I sneak over and chop them off. I DO NOT  like coriander.

With the coriander plants... try sprinkling some snail pellets around as the slater bugs eat everything.. or try a yoghurt container buried at ground level with a watery yoghurt slush in it. The slaters crawl into it to taste the yoghurt and drown.. Hopefully... Beware the pets though they like to drink it.. it wont hurt them just wont get rid of the slaters either... perhaps a rock or log over the top to stop the pets if you have any.. Good luck I'm in W.A too and those slaters eat everything new and young in the garden!!

Third time lucky with mine - the latest plant is looking like a goer and yes, I have snail pellets out to protect it.

glad I read this!!  I've struggled with coriander but I thought it needed full sun...  should have asked or googled it!!
will put it in a cooler spot now it's 'finally' getting warmer..
