Help from the breadmakers ! Bread Rolls

I have had my TM for almost 2 years and love it to death, I make lots of great bread but cannot seem to perfect bread rolls.
I have tried a few different recipes and my rolls seem to be too "coarse" they never seem to be soft fluffy rolls like you find at the bakery. I use Wallaby bakers flour and Lowans yeast ( both new ) I am not sure if I have the water too hot ( or too cold ) or if I leave them to proof  too long ( or not long enough) I just can't seem to get it right they have largeish air bubbles ( kind of ) and they tend to go a bit flat!
I would love to make great rolls for salad rolls for lunches, hamburegrs and for the kids to take to school with meatballs etc on them

Which recipe are you using Deeau and how long are you baking them?

I have used the EDC one and also the cheesy garlic bread one ( bread dough with butter ) I bake for 20 minutes

I love Sourcream Sandwich Loaf. It makes a nice big loaf with a soft texture and the crust is not too hard. I just use Potato flour to dust it and slash it just before popping in the oven. I haven't tried making it into rolls, but I am sure they would be equally as yummy.

Deeau,  change your recipe.  It sounds like either too much yeast or over rising.  Use either Isi's Portuguese roll recipe or my No Fuss, and see how you go.  Let us know so we can help you.

I was always the opposite with great rolls but just couldn't get the bread loafs right. Now I have a better oven that can heat to the right temp and distribute the heat evenly I now have perfect rolls and loafs. I mainly use the bacon and cheese bread recipe for my rolls and loafs. Yummy. Hope you have a better result next time.

I tried the No fuss rolls twice on the weekend, the first time I got really sidetracked ( went on a 27km bike ride with my son) the 2nd time I only got slightly sidetracked in the garden, both times I left to rolls probably too long before I put them in the oven..... I think that may be my problem, the ones I made yesterday, after the first rise I went into the garden for 15 minutes ( that turned into and hour ) were much better than the ones I made Saturday. So I think in a round about way I may have solved my problem I need to keep track a bit better of my time! Will try again next weekend and see if I can get them right! Well time wise right anyway.

when you went on the bike ride I think the dough overproofed (?) and you basically took all the oomph out of it. One thing about bread making I find is that is does tie you to the kitchen for a while as you need to be around at each stage.

CP I am sure you are right....I didn't plan on riding that far ( nor did I know I was capable of it) I will get it right, I used to be able to do it but I think that was when my TM was new and I was following every recipe to the letter.

Don't know if this helps you but I always make "No fuss rolls".  I do add about a tablespoon of olive oil and a teaspoon or so of bread improver ( I buy mine from an organic shop but they do have supermarket brands also).  They must be good as DH even remembers to tell me before he has taken the last one from the freezer -( otherwise he might have to go with bought ones).
Not so good on the bread loaves though so might take a couple of hints from answers to your request

Deeau,  with all the bread you are making,  you will need to ride your bike.   However you can't do both  :at the same time.

Something I've learned over the years too is that you can not hurry bread. (just reminded myself that I had a loaf rising that needed punching down  :-)))
May all dairy items in your fridge be of questionable vintage.
