Mojito Cheesecakes - In The Mix

These little cheesecakes were very yummy! I made them for some friends and they went own very well.

A few points you might want to know
1. The recipe states that it makes 8-12 serves. I made 5. 12 serves would be shot glass sized not really nough for a dessert.
2. The base was not a sufficient quantity for the topping recipe. I had to made extra.
3. The base sets very hard and can be hard to get your spoon through to eat it so make sure you don't press it too hard into the bottom of the glass.
4. The cheesecake is super boozy!  if you don't like that you may want to half the rum.

Now I remember...I've made these also...as soon as you mentioned "super boozy". I would recommend cutting down on the rum as it tended to be an overpowering taste.

I made these on Friday and they were delicious, also impressed the pants off my guests (not literally). I would concur with everything said above, I made 5, had enough cheesecake for 6 but only enough biscuit for 4!

The recipe says to pack down the biscuit base, but I suspect you dont need to do that, it might make it easier to eat later.

The rum is pretty strong, I will probably halve it next time I think.

Definitely worth a try though, its one of the easier recipes in the book.
