Lemon Butter

 ;D This Lemon Butter is DELISH, even the 9 year old loves it and asks for Multigrain Toast and Lemon Butter most mornings.

I will add Recipe in the morning, really low in Sugar which is good as a lot of them a very high in Sugar  :)

I will be up for that, I need to use limes and less sugar, the other recipe calls for a little too much sugar for my liking.

Please post the recipe! One of our lemon tree limbs came down with all of the rain we've had and I have a laundry basket full of lemons to use up!

8 cartons of lemons.

I have a Lemon Butter recipe on here somewhere, but I found this one to be better:

3 lemons
450g sugar
2 Tbsp cornflour.

Peel rind from lemons with a vegetable peeler so it's very thin.
Juice lemons and place rind, juice and cornflour into TM bowl.
Grind on speed 9 for 20 seconds.
Warm for 4 minutes/90/speed2.

4 eggs
2 Tbsp water
Beat together in a separate bowl.

Programme 3 minutes/Varoma/Speed 3 and pour egg mixture through hole in lid.
Continue cooking on Varoma as above until thick and bubbling.
Bottle while hot.

The cornflour prevents the egg from curdling.
A great cook is one who can rustle up a fabulous family meal with some freezer burnt chops, wilted carrots, sprouting potatoes and cabbage that's gone brown on the cut edges.

Delicious on pikelets, toast or just on a spoon.
