Beetroot & Yoghurt Dip

Name of Recipe: Beetroot & Yoghurt Dip

Number of People: 8 +

Ingredients:

1 medium onion, peeled and cut into quarters
1 Tbsp olive oil
2 medium beetroot, peeled and roughly cut into eighths
1 tsp ground coriander
½ tsp ground cumin
1 MC (100ml) water
2 – 4 Tbsp natural yoghurt (depending on your palate)
Salt, pepper, sugar to taste
Olive oil to drizzle

Preparation:

Place onion pieces in TM bowl and chop for 5 seconds at speed 7. Add the olive oil and sauté for 3 minutes at 100°C on speed 1.

Add the beetroot pieces and process for 3 seconds at speed 7, (make certain that the Measuring Cup(MC) is in place before doing this!!), scrape down bowl and process for another 2 - 5 seconds at speed 7, depending on how well minced the beetroot becomes. You want to have pieces smaller than a pea but larger than grains of rice and it will not be homogeneous. Add the coriander & cumin and cook for 3 minutes at 100°C on speed 1, and finally incorporate the water and cook for 15 – 20 minutes at 100°C at speed 1.

Check after 5 minutes to see if the bowl needs to be scraped down and to make certain that it is not drying out too much. You may need to add some more water but it should not be swimming in water – otherwise make borsch from that lot & start again.

When the beetroot is fairly soft you can leave it to cool in the machine. Once cool it is time to blitz the mix. Scrape down the sides, place the MC on top and preferably a clean cloth around it. Blend for 10 seconds by slowly going from speed 1 to speed 9, scrape down the sides and repeat until you have a smooth mixture.

Add the yoghurt and mix for 3 seconds at speed 4. Check and adjust seasonings then plate up and enjoy. Serve with toasted Varoma Bread

Tips/Hints:

Chopping the beetroot before cooking significantly shortens cooking time.

i made this for the party on saturday night (with a few minor changes) and it was good :) much less messy peeling a raw beetroot too!!! lol

this is why i think this forum is great....i have been advised at the last minute i need to take nibbiles to a quiz night...what did i have....a beetroot!! 
now ive got home made crackers, thanks to teninas page and a beetroot dip thanks to this page!!! everyone is going to be so impressed...i hope!!
maybe i can get a sales pitch in at the quiz night!

I made this yesterday for some friends.
Substituted sour cream for the yoghurt, just to give it some body - absolutely delicious!!

I agree that this really is a big plus for the idea of a forum - a bank of recipes, with people prepared to try them and comment. 

Please note that I am just as happy with negative feedback - I know when dishes work for me - but there are so many variables and so many opportunities for me to stuff up. 

The more recipes the better.  I hope that TMX Australia with the recipes it receives will look at publishing a list of the recipes they receive, not just the 2 best.  It would be a fantastic resource.

Thanks for sharing the recipe.

Glad to share it - had to go back and see where it came from - as very few of my ideas are original.  It was based on a recipe in Food Safari.  It is so easy and tasty - so thanks Maeve and team for sharing too.

Just wrote a quick beetroot dip recipe for the New and Improved Everyday cookbook that is in the pipeline...using tinned beetroot, but if it gets the chop...(not sure why it would..) I will be asking you Thermomixer for the use of this recipe. LOVE the picture, how long did that take you???  ::)

I don't spend that much time usually - this was done especially because it otherwise looked like an amorphous blob of purple

you can tell that i have neither the time or energy to do the same LOL

Tenina, you are welcome to use the recipe - as i said - I "stole" it from Food Safari - so you probably need to acknowledge them more then me.   ;D

Chili would be good.  Fresh coriander would also be good. 

Please experiment and report back.

Tenina at Aussie TM HQ was also experimenting with the dip so she may have some good ideas too.

I did a roasted beetroot dip...can't quite remember it all, but roasted the beetroot with olive oil, salt, balsamic vinegar and brown sugar, then blended with roasted garlic, sauteed onion, cummin and coriander...maybe yoghurt, I think it is in something coming out soon, honestly can't remember...have recipe book overload! :o
