Making halloumi Cheese with photo

I made the halloumi cheese from Recipe Community.  It is time consuming but well worth it. I found the brine mixture to be a little salty so I'll reduce that next time. Initially the cheese is very soft but firms up in the brine.
I'll post some photos soon. (hopefully). I couldn't get rennet so used 4 junket tablets,crushed and dissolved in a tiny bit of water.
This even has the 'squeak' of halloumi. :D

Wow!  I had no idea you could make halloumi!  I have made paneer, thanks to Helene's fabulous info on her blog, but will put this on my list for the school holidays.  Thanks Cookie!

Like LellyJ I have made paneer a few times,  But thought Haloumi was in with those other magical products that had the recipes well hidden.
I will give this a try, one I can get the ingredients together.

I have just ordered some rennet from www.cheeselinks.com to make this recipe.  I LOVE holloumi cheese but it is soooo expensive, can't wait to give this recipe a try.
