Name of Recipe: Cauliflower Patties
Number of People: makes 8
Ingredients:
50g parmesan cheese
small handful parsley leaves
400g raw cauliflower, cut into florets
800g boiling water
1 dessertspoon Tenina's garlic paste
160g self raising flour
1 egg, lightly beaten
3 tblspns water
S & P to taste
olive oil for shallow frying
Preparation:
Grate parmesan and parsley 8 seconds/speed 8. Remove from bowl and set aside.
Pour the boiling water into the TM bowl, place the steaming basket in place and add the florets of cauliflower.
Steam 10mins/varoma temp/speed 3.
Cool the cauliflower pieces by plunging them into ice-cold water.
Place them back into the empty TM bowl along with the cheese/parsley mix, garlic paste, flour, egg, water and seasonings.
Combine for 15 sec/speed 2/reverse.
Remove the mixture to another container for ease of handling, mixing with a spatula to ensure everything is evenly mixed.
Cover the bottom of a frying pan with the oil and heat until hot.
Place 1/4 cup portions into the pan and flatten with a fork to around 3cms thickness. Cook on both sides until fritters are browned - approx 4 minutes each side.

Leftovers can be reheated in a pan or eaten cold.
Make smaller patties for finger food.
