Chorizo & Potato Frittata - For Foods Sake

Made a half recipe of this today.  The sliced potatoes were cooked to perfection in the Varoma and made a great base for the frittata.
Flavours were wonderful, we thoroughly enjoyed this with a light salad.  Will photograph the next time I make it. 5/5   :)

Ooh, I'm planning to make this one on Monday of this long weekend. Thanks for the review. ;D
A great cook is one who can rustle up a fabulous family meal with some freezer burnt chops, wilted carrots, sprouting potatoes and cabbage that's gone brown on the cut edges.

Delicious! Easy to follow instructions and not difficult at all, though there's a few steps.

I didn't have the Chilli Lime Salt, but used salt and some finely grated lime rind. Baked it in my small Scanpan baking dish. DH went back for seconds even though he 'wasn't hungry'...

Served with a green salad.

I made this for a function at school last night. I increased some of the ingredients as I wanted to make it in my roasting pan. I added asparagus (as suggested by Tenina) and pumpkin plus 1 extra potato to make it go further. I increased the eggs to 9 but I should have doubled them as it crumbled a bit. I did use the chilli lime salt. The taste was lovely though and would definitely make it again.

I forgot to mention I put mozzarella cheese on top too!

I hope  it was skimmed evaporated milk  as there is not a lot of difference between full cream and full evaporated milk kilojoules wise I think.

Let's  not count the fat in the chorizo. LOL!

I made this for dinner last night.  The recipe takes a little time, but it's very easy.  It turned out perfect & the leftovers were lovely this morning.  My other half wasn't as keen as me.  He said it tasted like a baked potato with chilli con carne on top.  And actually he described the taste pretty much spot on, that was exactly what it tasted like - but I love chilli so that suited me.
