Thermomix Kedgeree

Name of Recipe: Kedgeree

Number of People: 6

Ingredients:

200g long grain rice
Pinch of saffron threads
3 eggs
400g smoked haddock or cod
300ml milk
80g butter, chopped into small pieces
Juice of 1 lemon
150ml cream (35%)
Cayenne pepper
Salt & Pepper
Parsley to garnish

Preparation:

Wash the rice thoroughly with cold water, and preferably soak for an hour or so before cooking, add saffron threads and mix through the rice. Wash the eggs thoroughly. Place 1000ml water in TM bowl, insert basket with rice and eggs on top of rice.

Place haddock in a bowl that fits easily into the Varoma. Place milk in bowl to just cover the fish. Place in Varoma and position it over the Thermomix bowl.

Cook for 14 minutes at Varoma temperature on speed 4. After 10 minutes it may help to open lid of the Thermomix & fluff the rice around the eggs.

Remove bowl with fish from Varoma, drain and leave to cool.

Remove basket from inside the Thermomix bowl with aid of spatula. Remove eggs, cool and shell before setting aside. Place rice in Thermo server or bowl and mix through 50g of the butter.

Remove skin and any bones from fish before flaking.

Cut 1 egg lengthwise into quarters and hold for garnish later. Chop other eggs and mix with rice, fish, cream, lemon juice, cayenne pepper and season to taste with salt and pepper.

Grease an ovenproof dish and gently place kedgeree mixture in, dotting with the extra 30g of butter. Bake in a preheated oven for 10 - 15 minutes at 180°C.

Garnish with remaining egg and parsley and serve immediately.

Tips/Hints:

You can poach the fish gently at 60°C in the TM basket with water & milk just covering the fish, but as i have said elsewhere, I find it more economical and sensible to cook it in the Varoma.

Thanks fo this Thermomixer. I love kedgeree. This looks so easy with everything done in the TMX.
May all dairy items in your fridge be of questionable vintage.

Great breakfast food I say and onions a must. Wish I had not made butter with my cream now. It is too too wet to go to the store and I really really want this for breaky tomorrow so I will just add more butter and maybe some sour cream which I have.

My friend bought me a handful of saffron when she visited the middle east last year. Still have plenty.

I was thinking the same thing Cookie.  Is this a traditional Easter breakfast that I don't know about?  I could imagine the look on DH's face if I served it up to him - nothing but cereal with cold milk for his first meal of the day, be it 8am or 12 noon.

I always thought it WAS a breakfast food  contrived by British cooks from and old Indian recipe. Not sure about that.

Cookie you probably would not like my usual breakfast of congee Thai style with a lot of chili.

Hopefully some of our English and Indian friends can set me straight.

Gretchen I am pretty sure you are correct about kedgeree being a traditional breakfast dish. I think I'd cope with the congee but not sure about chilli at breakfast.
At the moment I'm having Chookie's muesli. Very nice.

Now there you are cookie 1 I really hate cereal. Will eat it it but can't see the point. Hate milk as well.

Now a cereal full of interesting hot and  spicy flavours  would be nice. How about KFC flavour?  A morning favourite is Berocca  in a glass of ice topped up with Australian Sparkling wine.

Thank goodness we are all different otherwise we would not have so many good recipes here.

Oh I remember that. Haven't had it iin years. I am not so fond of coconut milk. I find it too sweet but I can always add more chilli.

Yeah that is a great breakfast. Sort of mix and match.
