I have to agree with everyone's sentiments, the blog is really good, will spend some time looking through all the lovely recipes.
Made the rolls this morning and am pleased with how they turned out. I did reduce the sugar by half and also added 1 tsp of improver. Reminds me of when I make bagels (with the water bath). Thanks for a great recipe nonomix.

And julie0 I have to add one who makes food look so professional! What I mean is, your rolls are so round! I made maddy's choc hot cross rolls and the choc chip kept melting in my hand when I tried to mark it a ball and it all looked rustic!!!! Tasted yummy though!
