Thanks Snappy. Made this last night in a loaf tin for supper. I was a little worried because it didn't seem to rise that much but the texture was the best of any cake I've made in the TMX, it was very light and fluffy. Only a relatively small cake and after one piece ended up on the floor (accidently) and the kids had two pieces each it was all gone before it even had time to cool. I was worried about beating the sugar, butter and egg for 5 mins so stopped at about 4 and it was perfect.

Thanks wonder. It is only a small cake so I have to make it often because it gets eaten so quickly. It is the long beating of the butter eggs and sugar that makes it so light I think

Thanks for the bump. I still love this cake and it is eaten within a day at our place, an absolute family favourite! It's pretty quick and easy, I can normally whip it up whilst cooking dinner, put it in the oven when we are eating and it's ready for dessert.

Reminds me of my Gran's cake which was nickname by my cousin as the "dirt cake" because of the topping ... Always was a great one

I made this for a morning tea for my husband's work. Fortunately he overcame red and brought it back to my work to devour. Delicious.

I made this as a quick afternoon tea today and it was all gone within 5 minutes of it coming out of the oven. I didn't have any eggs so replaced the egg with 3 tablespoons of pureed apple.

Thanks Snappy - I'm a new TMX user & thought this recipe sounded very much like my grandmother's recipe which was always a favourite, except that I needed to get out the old electric beater - "separate one egg & beat the white until light & fluffy. . ." then continue. Followed your recipe exactly & baked in my usual 7-inch (18-cms) round pan. Perfect! Looks just the same. Sure it will taste great for our dessert tonight & will be made many more times.

This is a favourite quick cake in our place. We aren't big cake eaters but this one goes every time while still warm.
