Really nice chicken patties!

INGREDIENTS:
500g lean chicken breast fillets, chopped in large cubes
250g box chopped frozen spinach, defrosted with moisture squeezed out
1 onion, chopped roughly
50g (1/2 cup) grated tasty cheese (optional)
35g (1/2 cup) oats
100g (1/3 cup) BBQ sauce
2 eggs
2 tsp soy sauce or veg stock concentrate
Pepper

METHOD:
Preheat oven 180 deg C
Onion - 5 sec, speed 5
Add chicken - turbo a couple of times so chicken is minced but still with some texture
Add remaining ingredients - 6 sec, speed 4
Shape mixture onto oven tray lined with grease proof paper (bite sized flattened balls or larger rissoles)
Bake 30 min

Very versatile: as a meal: with mashed potatoes and veggies or keep these cold in the fridge (or lunch box) for a quick grab healthy snack, also nice as a 'hamburger' in between toast with lettuce, tomato etc. Oh and handy for entertaining (as smaller size which I sometimes top each with a cherry tomato). The BBQ sauce gives this a great taste.

Adapted from a recipe I copied from men's health magazine approx 5 years ago. The recipe calls for minced chicken but I use fillets as above.

Thanks Kulsha, I love chicken patties/balls for the grand-kids. Will try this one instead of the EDC one when next I need to do them.

when i can come up with a different name i would like to try these chicken patties, frank (DH) thinks he does not like. chicken  :-))
i don't need a recipe i'm italian

Thanks Judy, I didn't have success with the EDC ones so interested to see how you go with these. The mix on these isnt as firm, so I dont do them as balls - but still easy to work with for a flatter shape
Fundj I'm open to renaming this recipe with or without the word chicken in it hee hee, I was trying to come up with a creative/flattering name but gave up... ;D

Could we use fresh spinach/silver beet rather than frozen? We were given a massive amount of silverbeet that I will never be able to use all up. (the rabbit loves it though). :)

Must give these a go, though I do love the chicken, tomato and feta ones. Love the idea of spinach in them for a boost of iron. A great way to hide spinach from kids

I will give these a go.
I find the ones in the edc tasteless, so with the bbq sauce they should work well.

Dede, yes fresh works too (our fresh veg in Darwin is dodgy so often buy frozen...) - I have however thrown in a few handfuls of fresh baby spinach instead and it worked just the same. I think if you wanted to use the bigger leaves, just steam your fresh ones first and squeeze out excess moisture, chop it up so it roughly works out the same quantity of one of the frozen boxes worth  8)

DizzyGirl, I love the tomato and fetta ones too, another favourite !

Hally, yes my EDC ones came out really dry... (and tasteless also)...

I'll watch this post with interest - I find all I can taste of the EDC ones is the shallots, not to mention the colour - last time I added the shallots later but forgot about the parsley - still green!!! :-))

I'll definitely be giving these a go too as I don't like the EDC ones at all.
May all dairy items in your fridge be of questionable vintage.
