Pasteis de Nata (Portuguese Cream Tarts)
« on: September 07, 2008, 10:33:34 PM »

Name of Recipe: Pasteis de Natas
Number of People: depends
Ingredients:

500 gr. of ready-made puff pastry

Filling
250 gr. of milk
250 gr. of cream (uht or fresh)
175 gr. of sugar
50 gr. de baking flour
5 egg yolks
1 lemon peel
1 cinnamon stick

Preparation:

Add all the filling ingredients, part from the lemon peel. and cinnamon stick. Min for a few seconds, speed 4.
Add the butterfly and add the lemon peel and cinnamon. Cook for 18 mins, speed 11/2, temp 90º.

In the meantime, roll out the pastry and cut out small circles (use a tea mug, and press down hard) and place circles into a  baking tray (the ones we use to bake Yorkshire puddings).
Take out the lemon peel and cinnamon from the mixture and then add the mixture into the pastry circles. Mixture should be a little below the edge of the pastry. For an extra shiny edge, paint the edges with a beaten egg. This gives extra colour.
Place baking tray into a pre-heated oven (200ºC) and bake for 15-20 minutes.
To check if mixture is properly cooked, prick in a cocktail stick and it should come out dry.

This recipe comes from the Portuguese forum: http://www.forumbimby.com/forum/index.php?topic=21.0
If anyone can please post in how to make puff pastry in the TM, then I'd be grateful. I always buy it pre-made.

Love to know how you go since I have been wanting to make it for some time. If this does now work let me know I have a bill granger recipe as well ( which needs to be converted). Love to know if you get the traditional silver casing as well...

There's a recipe in My Way of Cooking too Chookie, page 272 so should be on the app as well.  I've done the Bill Granger one too Courton, loved them.

I made these in my Thermo Chef for my son's birthday. They were easy and very yummy - I love anything with custard.
I used the recipe in the Thermomix app on my iPad.

Hi Chookie - I am travelling so can't be sure but from recollection the MWOC recipe uses flour - I think cornflour would work better as texture was a bit grainy.

I have made the ones from MWOC several times and they are delicious and loved by guests! There is a review on this forum under 'My way of cooking' from memory.

hello all
Im enjoying my thermomix journey so far and have made some really lovely things from this forum. My 'to do' list is sooooo long though. It is hilarious here in my house, hubby got a new Weber bbq and I have my foodie purist son home, so we are all arguing over who is going to cook tonight... and what method! Who would have thought?

Now, to my post. I make the Bill Granger Portugese tarts regularly, and note that some of you do too, has anyone converted the recipe? I love it so much, but if not, will try the one from the mwoc book. Picture does not do them justiice, custard looks a little 'transparent'
happy day

Yes I have made them,  and converted them to TMX.  They are posted here and on my Blog.  Many of our members have made them.
Glad you are having fun with your TMX.

Helen it sounds as though there is lots of foodie fun in your house at the moment.
May all dairy items in your fridge be of questionable vintage.
