Faffa I know it's probably too late .......
But I found the mandarin marmalade recipe in the ww preserves book
1 kg mandarins
1/4 cup lemon juice
1 liter water
1.1 kg white sugar.
I haven't converted to TMX yet so here are the unconverted directions:
Combine whole mandarins, lemon juice and water in a saucepan and bring to the boil. Reduce heat and simmer for approx 45 mins.
Remove mandarins from liquid, reserve liquid. Coarsely chop mandarins including rind but discarding any pips. Rturn the chopped fruit to the liquid.
Return fruit mixture and sugar to pan, stir over high heat, without boiling until sugar dissolves. Bring to the boil. Boil uncovered, without stirring for about 30 mins or until jam jells.
