Train Potatoes

Name of Recipe: Train Potatoes
Number of People:[/b] 3 - 4 serves
Ingredients:
500g potatoes, peeled and cut into 2cm cubes
600g boiling water
1 carrot - 100g, cut into 2cm rounds then halved
1 onion - 120g, halved
3 small spring onions or 2 large - cut into 8cm lengths
Salt to taste
1/2 tsp Tenina's garlic paste
30g butter - you can use oil if you prefer


Preparation:
Place the cubed potato into the steaming basket, add the boiling water.
Cook 20 mins/varoma temp/speed 3.
Place the cooked potatoes into the thermosaver to keep warm, empty the TM bowl, rinse with water and dry.
Add carrot, onion, spring onions and garlic paste (in that order) and chop for 3 sec/speed 5.
Scrape down the sides of the bowl with a spatula, add the butter and saute 8 mins/varoma temp/reverse/speed 1.
Season the potatoes, add the carrot mixture and toss gently so as not to break up the potatoes.

Tips/Hints:

I cooked other vegies to go with today's meal whilst the potatoes were cooking.  Corn coblets on top of the potatoes, sliced cabbage in the varoma dish and whole green beans on the varoma tray.

Yes CC, whatever you use, just check to see they are cooked as some take longer than others - mine needed the full 20 minutes today.  I thought of your DH as I was making this one today  ;)

Oh to have the garlic paste recipe  :'( I s'pose I'll have to get a copy of Tenina's book - this lovely paste seems to be popping up in a lot of recipe's lately............ I get envious every time I read about it!!! ;D
