Bread Dough - Thermo Chef Natura Recipe Folder

I have tried making bread in my Thermo Chef using recipes designed for the Thermomix, with mixed success. Bread dough seems to tax the motor of the Thermo Chef, and I have had some E3 ( motor overheating) and E5 ( Motor stall or overload) errors. So I was interested to try this new recipe that came with the new recipe pages that I was sent.

I followed the recipe, and didn't have any machine errors when mixing the dough - although the recipe only calls for 1 minute of kneading.  The kneaded dough wasn't very smooth and I felt it needed extra kneading, but as I was following the recipe to a T this first time, I oiled my hands and put it into the greased bread tin as instructed. The loaf rose well and I was interested to see how it tasted. I have to say that I was a little disappointed as it was heavier that other bread I have made. It was an okay loaf - I would rate it 2 1/2 out of 5.

I have tried it again, but this time I mixed it for 1 1/2 minutes, at which time the motor was struggling a little. I tipped it out onto the bench and kneaded it a little until it was smooth and pliable. Then I placed it in the tin and followed the instructions. This seemed to  improve the texture of the bread a little, as I don't think that it was quite as heavy as my first loaf.

I may try it again and give it a double prove and see if this improves the texture. If that doesn't help, I will let the yeast bubble before adding the flour. If that doesn't work, I'll abandon this recipe!

On the plus side, this bread does make yummy, crisp toast if you can manage to cut it thinly - I slathered on some of Tenia's Va Va Voom Strawberry Jam that I had made in my Thermo Chef for brekky and it was delish.

Well you are certainly not letting it beat you which is great. If you keep at it you will get the perfect loaf I'm sure. Can you change the quantity of your favorite. Bread dough so it's not to much for the TC to handle?
Is it the amount of dough or the denseness of the dough that the TC struggles with?

You seem determined to get it to work ES.  I am just wondering, if after the initial kneading in the TC, you could knead it by hand for some time as we mostly knead for 4 minutes and surely 1 min isn't anywhere near enough.

ES,  could you give us a breakdown of the recipe and we might be able to help.  A double rise might help also.

Ok . I have tried this again, but this time I have taken heed of the bread advice on this forum and ditched the original instructions.

The recipe calls for 350g water, 2tspn salt and 3 1/2 tspns caster sugar into the bowl for 2 minutes, 37C, speed 2. Then you add 300g of bread flour and 14g dry yeast to the bowl and mix at speed 6 for 8 seconds. Then you add another 300g of the flour on the knead function for only 1 minute. You then put the dough in the bread tin and put it into a 50C oven for 30 minutes until it doubles in volume, along with a pan of water. The oven temp is then increased to 225C for 30 min.

I found that the bread was too heavy, so here's what I did on my fourth attempt at this recipe:
1. Place 350g warm water into the TC bowl with 2 teaspoons of raw sugar and 14 g dry yeast. Wait about 5 minutes until it foams up.
2. Add 1 teaspoon of salt to 600g of bread flour, and add half of this to the foaming yeast mixture. Mix 8 seconds/ speed 7.
3. Add the other half of the flour and use the knead function for 2 minutes. Scrape down the bowl and let the machine rest for a minute.
4. Knead for an extra 1 1/2 minutes.
5. Place in a covered, greased bowl and leave it to double in size.
6. Knock down, give it a quick knead and shape it into a loaf. Place it in a greased tin, and leave it to double in size again.
7. Place a dish of water onto the bottom shelf in the oven along with the bread and cook in a preheated 225C oven for about 30 - 40 minutes.

This time, the loaf rose well and had a light texture.

That looks awesome.  AND BIG.   I bought a bread tin the other day, that hopefully is big enough.
Thanks for sharing this recipe, ive been looking for a white bread recipe that isnt too sweet.  Ill give this a go soon

Nonomix's rolls were the first ones I tried before I tried the no-fuss rolls. I think it's time to revisit them though as they were really nice, and I think I know how to adjust the method to suit the TC now.
