As anyone who's been to a Thermomix demonstration knows, the custard is a wonderful climax to the demo, really showing off the Thermomix.  It only takes 8 mins all together.

I'm reaching out for some inspiration of an equally impressive and delicious and easy dessert to offer that is allergy friendly.

Soy milk and nut milk are not options and the recipe can't include dairy or egg.

What do other consultants include for desserts for vegan hosts?  I'd really appreciate some suggestions from any forum members.  Thanks.

Cecilia, I know the Polenta custard pge 114 in the Vegetarian book uses cashews but could you substitute the cashew milk for oat milk. There is an oat milk recipe in Aileen's vegan recipe book Rainbow Recipes.

Thanks for the lead, JD.  The folk I am demoing for in this instance can have no wheat and no nuts either, so I still need to search on.  All ideas give me other ideas though and I'm sorry I didn't list off all the things that needed to be avoided in the heading.  You have helped me tweak the heading.  Thanks again.

Could you use rice milk Cecilia? There is a recipe in Fast and Easy Cookbook that I can send you, it's a little different than this recipe.

Eureka!  You have found a very good option for me, CC.  Thank you so much.  Yes, please PM me. 

The only reason I am keeping on looking is that the previous dish in the basic Australian menu is risotto.  (Well, pasta e fagioli is another option, but my people are allergic to wheat so that's out.)  I may well change the main meal if I get permission to, if I can't find something as exciting as you've just offered to close the demo with, as I suspect people might judge the TMX as limited if I follow risotto with rice pudding.

Cecilia you could do the pasta with a spelt pasta or the better one that I have found for me is a rice/quinoa mix (I think it is orgran brand) I get it in Coles in the health food section. THe only thing you would need to watch is the cooking time as I think it is 8 minutes. So cook your sauce for 12 minutes the first time and then 8 minutes after you add the pasta :)

Thank you, Faffa.  I really appreciate that.  I have so much to learn.  I didn't know spelt was non-wheat.  Thanks.

I have just found a recipe for chocolate custard in My Way of Cooking (p212) which says the the egg is optional.  It does have 500g milk but maybe I could use rice milk for that.

I guess it's action stations to try these things out so I'm not flying blind at a demo where I really want the guests to have faith in me.

Just sent you a thank you for it, CC.  My only concern is that it calls for refrigeration.  I shall have to see what it tastes like warm as we won't have time to put it in the frig at a demo.
You could always make some at home the day before and take it chilled.Just something for you to consider ;D

There is this recipe too (my kids love this one) and I have this tweak for it


Chocolate Yogo / Custard


50g Chocolate
40-80g Sugar
35g Arrowroot / corn flour
500ml Milk
¼ tsp Vanilla essence


1 Grate Chocolate 5 seconds on speed 8
2 Add rest of ingredients and cook 10 minutes on speed 4 at 100oc

Tips
Add orange rind for a jaffa flavour
Make with white chocolate
Sprinkle nuts on top
Fold through crushed chocolate biscuits

if you go for the pasta just check that it is wheat free and not gluten free that they need as spelt IS NOT gluten free. Hope this helps you out  :-*

Some great ideas!  I always do the pasta fagioli with rice pasta and cook for slightly less time.  Spelt is kind of like a cousin to wheat and although some people find it easier to digest, many wheat free people still can't eat it.
You have been given lots of ideas, I'm sure your hosts/guests will really appreciate the time/effort you are putting into it.

Thank you, Tarosuma, for such nice comments - the icing on the cake.  I don't mind at all doing homework to meet the needs of my hosts and guests.  One of the main reasons I got into Thermomix was to have challenges in my life again and my wish has certainly come true.  When I was a teacher, one of the most talented students in our department suddenly died through allergic reaction to food in a restaurant.  That loss had a profound effect on many people, including me, and I would love more people to understand how much the Thermomix gives them the capacity to live well and prepare healthy allergy-friendly food easily.

I tried this tonight.
Che has mumps and was feeling very despondent and wanted YoGo.
I don't give him YoGo as within a couple hours he is climbing the walls.  Not sure what is in it but it is lethal.

This got the thumbs up even before it had time to cool.   ;D
