I made the Vegie stock concentrate, a bolognese sauce and choc custard! all very awesome

Now need to use up some pumpkin in my fridge so looking for a risotto recipe maybe or sweet potato, celery lol

Try cutting up your pumpkin (or sweet potato) into bite sized cubes - drizzle with olive oil - salt, pepper, and whatever spices you favour - and roast in the oven.

Make the mushroom risotto but leave out the mushrooms . . ;D - at the end, stir through the parmesan,  pumpkin pieces and maybe some chopped up fetta cheese (be careful of the salt though . .  I only use half the amount of veg stock and the fetta can be salty also.)
