Try the sticky date pudding in the EDC book.  I've made this in advance and pop into the freezer, just defrost over night and reheat in a slow oven. you can make the sauce on the day, whipped cream and/or custard.  It is bullet proof and comes out light and moist.  Easy to get 9 big servings from one cake, or you can make them as individual cupcakes.

I went to High Tea 2 weeks ago for a Hens Do and this is what we had on the menu.

When I first saw that middle photo I thought it was a big pile of roast chickens... :-))
