Can I rescue my cauliflower and almond soup?
« on: May 09, 2012, 05:06:57 am »
I made some cauliflower and almond soup yesterday night for today and realised I had forgotten to make another batch of vege stock concentrate. So, as a result it tastes very bland and blerghhh. Can I rescue it?

About to make a new batch very soon.

I would cook up some onion, garlic and add white pepper.  I don't  like the veggie concentrate so this is what I do and never have bland soup.  Hope this helps.

I sampled putting a bit of the vege stock into the cauliflower soup and I was happy with the result but thank you for your suggestion chookie.

I can't believe what a difference vege stock concentrate makes (I was always a bit skeptical but this proved me wrong). Do you not like the flavour chookie?

I have made it twice now.  I think it is the salt.   The second lot I made with less salt,  but still didn't like the taste.  I froze the second lot as I didn't think it would keep without the salt.  I make my own chicken stock and freeze it, so I probably don't need the TMX one.  I know many of our members really like it.  Must be just a taste thing with me.

I hardly put any salt in mine & "surprise"  I freeze it in small portions.

I still prefer my chicken stock boiled with carcass for 4-6 hours :)

I prefer Bron's Spanish Vegetable Stock - it keeps well and i actually keep it in the freezer but it doesn't freeze.
