This is Fundj's conversion.  Read the original thread here.


H P SAUCE  Ingredients:

10 tomatoes, chopped (740g)
1 cup brown sugar, 150g
1 onion, chopped 95g
1 lemon, sliced 75g
1/4 cup white vinegar, 60g
1 tablespoon salt, 20g
1 tablespoon allspice,
1 teaspoon pepper,
1 tablespoon Worcestershire sauce,
1/4 teaspoon hot sauce (I use Tabasco)

Method
Place all ingredients into TM bowl and process on speed 8 for 30 seconds.  Cook for 10 minutes on Varoma on speed 2.  Scrape sides and cook for a further 40 minutes on 100c on speed 2.  Process for one minute on speed 8
I increased the speed to 3 when it had 25min left on the timer, and i did cook it for 5 extra min on 100 speed 4.

JD  can you pls add some of the weights that i added later

i have changed the sugar from 200g to 150 grams
i don't need a recipe i'm italian

You have to be kidding me?? I am quite possibly the most excited bunny ever! If this tastes like the real thing I'll be saving thousands each year!!!!!!!! ;D

Thanks so much for posting this. I cant eat store bought HP sauce as it isn't gluten free and I hadn't thought of making my own version. Well done.

 a funny thing is that a few days after i made it the kids  said it was nice, a few night ago we had a BBQ  thats when they said it was better than the really thing  :-)) so it must get better with age lol

This sounds great. Going to try this. Just need to buy some more tomatoes and some hot sauce. I think this would be a real hit in this house.

Hadn't thought of doing that - might give that a go as I have a few jars which I made about 3 - 4 weeks ago which I don't want to lose through mould.  Is it OK to freeze something that was made that long ago?  The sauce is in sealed jars that haven't been opened as yet.  Should I pour the sauce into freezer bags?  What happens if I freeze it in the jars?

I followed this recipe exactly with one small addition of a tablespoon of molasses added for extra sweetness and in the hope it would make it a little darker. It's still hot at the moment but from initial tastes, I like it a lot. It's not as brown as the original but seems to be just as yummy. I'm hoping it will thicken a little more as it cools although it is relatively thick anyway. Can't wait to try it on bacon sandwiches!

I have another recipe posted here that has a totaly different approach to it, that u also may like.. But i will tey this ine for sure, except for the worchestire sauce since i can not have that due to allergy ...  Cant wait to comare both recipes

Has anyone made both? It would be interesting to see if they tasted similar.

I was not able to make this one myself because there are a few things in the one from judy that i can not use myself. I do know that prunes (or plumbs) are in the original hp sauce, as is tamarind paste.
