Chewy Honey Oatmeal Biscuits
These are converted from a Healthy Food Guide magazine. I doubled the recipe :)
Ingredients:
50g reduced fat table spread
110g caster sugar
15g honey
1 egg
1.5 tsp baking powder
150g flour (use half wholemeal if you like)
1/2 tsp ground cinnamon
130g oats
120g chopped dried dates (you can just chop them roughly by hand; they will be chopped up more when mixing)
Method:
1. Preheat oven to 180 degrees and line two trays with baking paper.
2. Beat spread and sugar for 10 seconds/speed 4. Scrape down sides of bowl and repeat if necessary.
3. Add honey and egg. Beat for 10 seconds/speed 4.
4. Add remaining ingredients and knead for 1 minute/interval speed. Scrape bowl and knead some more if necessary.
5. Form mixture into small balls and flatten on trays. Bake for about 12 minutes. Cool for 5 minutes on trays before transferring to a wire rack to cool completely.
These biscuits will keep for 2 days in an air tight container :)

Chickie - the family love them - very tasty!! I didn't add cinnamon and replaced all of the flour with wholemeal and used milled rapadura. They kind of tasted like Anzacs - will definitely make again - very easy to make.
Delightful Den - I followed the recipe exactly and they came out perfectly. I can't see how they are healthy because they are so good. I am actually finding them a bit sweet so next time I make them I might substitute half the fat and sugar for apple sauce.
This time I have used 25g butter and 25g of fresh EDC applesauce and 50g xylitol instead of sugar. I have also used 100g wholemeal SR flour and 50g almond meal. The mixture seems moist enough. Outcome - they are a little bit dry and could use a touch more xylitol but are definitely edible.
Next batch - I used 25g butter, 30g xylotol, 60g apple sauce. I creamed these all together then followed the recipe as above.
Chickie - Made these again yesterday and replaced all of the sugar with apple sauce added 10g more honey, used half almond meal, half wholemeal flour and added a little extra oats as the mix was a bit runny. They turned out lovely, DH said next time they could do with a bit more honey and the kids enjoyed them.
Delightful Den - Made these again. This time I made them as a slice. I also didn't clean the bowl after making peanut butter and left about 1.5 tablespoons in the bowl. I swapped 50g of almond meal for some of the four and molasses for the honey. Also after I started making them I realised I didn't have any dates so just used sultanas and a few dried cranberries. The mix tasted really good. Result - This worked really well. I cooked the slice for about 20 minutes, it is very moist and has a light peanut butter taste.

Do you use fresh dates or dried dates? ???

Um... I thought dates were dates.... but I use the ones that you buy in the dried fruit section. So I guess they're dried :D

Fresh dates would be plums would they not? ???

Dried plums are prunes. Dates can be bought fresh in the produce section of the supermarket or dried in with the other dried fruit. Dried dates will keep longer. It's a bit like fresh apricots vs dried apricots.

Den, wow, you must have become very sensitive to fat and sugar. I'd be interested to hear how you go substituting some of the fat for applesauce. I wondered if it would make them too dry :-))
I was thinking that next time I make them, I would use half wholemeal flour and half almond meal. What do you guys think about that? Would the almond flavour add another level of yumminess to the biscuit?

I think that the almond meal would definitely add another dimension to these biscuits and is worth a try. I also thought that they would work well as a slice or bar. I was thinking I could make them in a slice tray and cut them into bars instead of buying muesli bars.
I don't think I have become sensitive to fat. I love the stuff. We don't buy/use anything other than butter. So my thinking with the applesauce was to reduce the fat content a little.

Good idea Den, I think they could work as bars :) And with a bit of tweaking they could probably work as muffins too ;)
Almond meal might be a good thing to use if substituting apple sauce for the butter since the almond meal would add more fat. Might try next week ;D

I agree Delightful Den, next time I would also reduce the sugar a little. Apple Sauce would be a great substitute.

Yes I still added the honey. Actually the sweetness or lack of it is growing on me.
Banana might be the way to go. I might try more applesauce next time and see if that helps.

Amy I prefer 8 - 8.30 and consider that early for me as I have such late nights (can be anything as late as 1.30 am when I turn the light out) but Geoff is in bed by 7pm (and sometimes as early as 5.30 depending on how he feels) so we have different time clocks. I have to conform to his hours though which means I should go to bed earlier but that is impossible as I achieve so much once he is in bed. Unfortunately I can't cook then though ;)

Where can I get xylotol from?
I purchased my xylotol from a health food store. It is expensive, about $7-8 a kilo but gets cheaper if you buy it in bulk. Xylotol is a sugar alcohol that has almost the same amount of calories as sugar but it does not trigger an insulin response in the body.

They turned out lovely DH said next time they could do with a bit more honey and the kids enjoyed them :)

This worked really well. I cooked the slice for about 20 minutes, it is very moist and has as light pb taste.
