Best time of the day, Amy !! ;D ;D ;D ;D - I used to be such a night person - not now though. Totally reversed, can be up as early as 3 or 4 sometimes . . However, at the other end of the day - that's a different story!! ;D ;D ;D ;D

Amy I prefer 8 - 8.30 and consider that early for me as I have such late nights (can be anything as late as 1.30 am when I turn the light out) but Geoff is in bed by 7pm (and sometimes as early as 5.30 depending on how he feels) so we have different time clocks.  I have to conform to his hours though which means I should go to bed earlier but that is impossible as I achieve so much once he is in bed.  Unfortunately I can't cook then though  ;)

Where can I get xylotol from?

I purchased my xylotol from a health food store. It is expensive, about $7-8 a kilo but gets cheaper if you buy it in bulk. Xylotol is a sugar alcohol that has almost the same amount of calories as sugar but it does not trigger an insulin response in the body.

Made these again yesterday and replaced all of the sugar with applesauce added 10g more honey, used half almond meal half wholemeal flour and added a little extra oats as the mix was a bit runny. They turned out lovely DH said next time they could do with a bit more honey and the kids enjoyed them :)

Made these again. This time I made them as a slice. I also didn't clean the bowl after making peanut butter and left about 1.5 tablespoons in the bowl. I swapped 50g of almond meal for some of the four and molasses for the honey.

Also After I started making them I realised I didn't have any dates so just used sultanas and a few dried cranberries.  The mix tasted really good.
